I haven’t tried very many new recipes lately as I’ve had my hands full with other things. I’m overdue for a recipe roundup post, however, so here’s a quick recap of the (kind-of) latest.
Baked Jicama Fries – I’ve had this recipe pinned forever and had pretty much given up on getting to try it. Then we found jicama during our grocery store explorations! The good news: the fries were easy to make and jicama is low-carb. The less great news is that while they were pretty good, I wasn’t as impressed as I’d hoped to be. I’m keeping the recipe anyway, though, because it’s nice to have guilt-free fries and to put some variety in our diets.
GF/Paleo/Keto Angel Food Cake – This turned out well! I was surprised by how quick and easy it was to make. I will definitely be saving (freezing) my egg whites every time I make a carbonara so that I can make this cake when I collect enough. : )
Keto Cinnamon Cereal – Total fail. The amount of time involved aside, this goes from undercooked to burnt instantly… at several minutes less than the minimum recommended cooking time. Fortunately, this isn’t my first rodeo and I only made half a batch as an experiment and didn’t get my hopes up too high. Not a great use of a morning, but I’m glad I gave it a shot.
Keto Gummy Bears – I made these in donut molds instead of gummy bear molds both to save time and to avoid buying any new kitchen things. I’m very pleased with how they turned out! You definitely need to use a strongly flavored juice to make them come out right, but this is a keeper!
