It’s been a while since my last recipe roundup. There’s not too much to add, but all of them are good enough that I want to share them sooner rather than later, so here you go!
Roasted Cabbage Carbonara – This had been sitting on my recipes Pinterest board for literal years and I had a cabbage in the fridge that I’d bought for another recipe I’d then changed my mind about, so I finally gave it a go. Oh my goodness. Why did no one tell me how much better cabbage tastes when you roast it?! Technically, I only followed that half of this recipe and just combined it with my favorite stupid-easy carbonara sauce, but I’m entirely pleased with how it turns out and I may never eat cabbage in any form but roasted ever again. It came out with that silky-slick texture I associate with rice noodles which is a Serious Win. 10/10 highly recommend.
Twice Baked Potatoes – I only half-followed this recipe, too, but next time I’ll seriously consider making it in casserole form. The important thing here is that instead of the second baking I threw them in the crockpot and it worked perfectly. I am always on the prowl for meals that can be done and waiting for us after we walk in from three hours of being at the yoga studio, starving and in need of food. It looks like you can do this with sweet potatoes, too, so despite my goal of keeping our carbs down, this may have to semi-regularly make the rotation.
Keto Pumpkin Cheesecake – which I covered in a separate post already. : )
Loaded Cauliflower Casserole – This was cheap, stupid easy and delicious. I prepped it ahead of time and just threw it in the oven to heat back up. Pretty sure it will do well in the crockpot in the future, too. It’s a keeper!
